I only put meat, cheese and rice in my peppers (like I said, super easy). The whole process takes me about an hour (with the cooking of the peppers) and clean up is, again, super easy.
I use ground beef and fried it up with fresh green onion, salt and pepper and a tad bit of Goya seasonings.
While that is cooking, I make up the yellow rice as the directions state.
You can use any kind of bell peppers. I use the mixed green and red simply because they were on sale 3/$1.
I use my jumbo muffin pan to cook the peppers in so I don't have to worry about them tipping during the cooking process.
I mix all the ingredients, including cheese together in a big bowl, stuff the peppers and add a smidge more cheese on top to complete.
Bake in the oven at 350 degrees for 30 minutes and then enjoy!
They were delicious, so delicious in fact that I could not stop feeding myself to take a picture of the end result.
But trust me, they were yum.

Thank you for sharing! My mom used to make stuffed peppers and I just loved them. I always thought they'd be difficult, but this sounds pretty easy! I'm going to try the recipe with ground turkey breast!
