More Veggies, Please.

I like to think I'm pretty lucky that my kid eats vegetables. Sure, she'll only touch peas and corn, but hey, it's better than nothing.

While I like to think I'm lucky, like most Moms, I think I can do better.

I think I can get her to eat more types of vegetables, and if not, I can always sneak it in there.

So I picked up a few books today at the library and orders some others like Deceptively Delicious and the Sneaky Chef.

And sat down and wrote out a battle plan. I'm hoping that the food I cook and bake will look exactly like it does in the pictures. And it will taste as good as some people rave because, honestly, a veggie brownie sounds gross.

But I'm open to it.

So tell me does your kid eat veggies? Do you have to hide them or they'll openly munch on trees of Broccoli?

The boys did when they were small, but then they stopped. Peyton is now opening up to trying them again. I made califlower the other night and he ate it. I tossed it with olive oil and salt and then baked it at 400 or so for 30 minutes until they were lightly browned and tender. Shey just touches his tongue to it and shakes his head. I didn't eat them til my 20s, so they can always catch up later. :)
